I feel as though K-on! gets too much grief through fanart sometimes. Yes, the show was full of moe, but it had some more serious quality to it as well. I also don't think it was intended to be a sit down and think about the philosophy of life sort of show in the first place.
If moe wants to grow into its own genre of anime, well, that's great. Some people will watch it and some will not, as with guro, sci fi, mahou shoujo, etc.

I found K-on! to be done very well all in all, personally. (Besides, tan Azu-nyan wins.)

Pretty much everything you said about the show I felt the opposite. K-On in the end for me was one of the phoniest most purely marketing oriented television shows I have ever borne witness to. There was not a single moment I found that came across as at all real to me and I'm pretty sure "make it moe so it will sell to our benefactors" was the only thing on Kyoto Animation/Kakifly's mind at all times during the shows production run. Just a thoroughly uninspired show with cheesy fluff music meant to appeal to moe otaku in Japan (sorry but I like my music with real effort if they are going to go ahead and bring up Jimi Hendrix in one of the unfunny gag bits like they expect us to compare the shows music to All Along The Watchtower), moe traits that supplanted real character development throughout and above all else stock SOL comedy plots inbetween the concert episodes (Oh look they are going shopping....now they are going to the beach....and now they are having a christmas party.....wait haven't I seen this in every other show that has an all female cast?) just in case the target audience in Japan might actually start to worry that it was going to get all creative and clever on them.

To borrow from what the Nostalgia Critic said in one of his latest segments, K-On is "Bland Shit 101". It has just enough of a promise of an interesting premise to keep you watching (hope), but almost never does anything even the slightest bit remarkable or interesting with it's time, dashing any hopes that the show is made for anyone other than that diehard otaku in Japan who will buy anything as long as it has a cute moe girl face attached to the product label.

Good perspective on things. I thought K-ON was a whole load of fluff (it is) but I never realised there were so many paralells to real-life bands, despite the infectious moe factor. The attention to detail is always great.

I especially loved the part where Yui is complaining that her Les Paul was too heavy, at least they kept that realistic.

Also you'd be surprised how dark some of the doujins are.
